Wine And Food Matching

Wine is very often consumed with food, and there is a long history of suggestions about which wines go best with which foods. It is a difficult subject, as a lot depends on personal prefernce and taste. Many pairings are traditional in some countries, such as white wine with fish in England, but may differ in others. Foie gras is often served with a dessert wine such as Sauternes. Many European wines with a long regional history have a special affinity to the local cuisine, such as the wines of Alsace and Jura. The amount of acidity in wine and food is important when matching them.
