riboflavin-5'-phosphate

Riboflavin-5'-phosphate is a coenzyme for a number of oxidative enzymes including NADH dehydrogenase. It is the principal form in which riboflavin is found in cells and tissues. Energetically it is more expensive to produce, but is more soluble than E101. E101a, a food additive, is riboflavin-5-phosphate. It is used as a colourant and is likely derived from genetically modified organisms. The molecule consists mainly of the monosodium salt of the 5'-monophosphate ester of riboflavin dihydrate obtained from chemical action on E101 riboflavin. It is rapidly turned to free riboflavin after ingestion. It is found in many foods for babies and young children as well as jams, milk products and sweets and sugar products.
