Papa A La HuancainaPapa a la Huancaina (lit. Huancayo style potatoes) is a Peruvian salad of potatoes in a spicy, starchy cheese sauce, called Huancaina sauce (thus the origin of the name). It's normally served with lettuce, eggs and olives. The sauce is made of fresh white cheese (also farmers cheese), crushed saltines, oil, "Aji Amarillo", evaporated milk, garlic and salt, mixed in a blender.
