Panch Puran

In Indian cookery, Panch Puran is a mixture of equal parts of five different whole spices. "Panch" means five in Hindi. The spices are;
Fenugreek (Hindi: methi)
Kalonji This is something like onion seed. (Please correct if wrong!)
Mustard Seed (Hindi: rai)
Fennel Seed
Cummin Seed (Hindi: jeera)
Simply mix equal quantities of the seeds. Store in a sealed jar. They keep very well. The whole seeds are usually fried in oil or ghee before adding potatoes or other vegetables.
