Otak-otak

Otak Otak is a fish cake grilled in a banana or coconut leaf wrapping. It is made by mixing fish paste (usually mackerel) with a mixture of spices including chillies, garlic, shallots, turmeric, lemon grass and coconut milk. The mixture is then wrapped in banana leaf that has been softened by steaming, then grilled over a charcoal fire. Otak-otak is a Peranakan dish in Malaysia and Singapore; the Malaysian town of Muar is particularly famous for it. It can also be found in Indonesia, especially in Sulawesi.
