Mushroom SauceMushroom Sauce Ingredients: Veloute sauce, essence of mushrooms, butter. Mix two dessert-spoonsful of essence of mushrooms with a cupful of veloute sauce, reduce, keep on stirring, and just before serving add an ounce of butter.
