Leipjuusto

Leipjuusto ('bread cheese') is a fresh, hard cheese made from cow's milk, originating from Northern Finland and Kainuu. Leipjuusto is baked, grilled or flambed to give it its distinctive brown or charred marks. In Ostrobothnia, leipjuusto is called juustoleip. Leipjuusto can also be eaten as dried. Fresh cheese is naturally dried for a few days in an airy place. Fresh or dried leipjuusto is sometimes put in a cup, and coffee is poured over it. Another common way to eat leipjuusto is with cloudberries. Leipjuusto can be eaten warm or cold.
