kir royale

The Kir Royale is a sparkling cocktail only containing two ingredients:

Sparkling wine, Cava or Champagne mixed with
Crme de Cassis, which is a blackcurrant liqueur,

at an approximate ratio of 5:1. Place the liqueur at the bottom of a champagne flute and add the other ingredient. A variant recipe uses the raspberry-flavored Chambord instead of Crme de Cassis. The kir is named after Flix Kir (1876-1968), a former mayor of Dijon in Burgundy. The related cidre royal cocktail is made from cider (instead of champagne) and crme de cassis, plus a measure of calvados.
