Jaggery

Blocks of solidified concentrated palm sugar syrup heated upto 200° C are called Jaggery. It is used as a sweetener in cooking across various parts of India. Traditionally, the syrup is made by boiling raw sugarcane juice in a large shallow round-bottom vessel as shown here.
