Calabasa
A
calabasa
is a kind of
squash
commonly eaten in
Latin America
, the
Philippines
, and the
Caribbean
(not to be confused with a
calabash
). Its use as a food probably originated in
prehispanic Mesoamerica
and spread to other regions via
Spanish
colonial
influence. It grows about the same size as a
pumpkin
, with a green or yellow skin color and a yellowy-orange flesh. The taste is smooth and somewhat sweet. It is eaten many different ways, such as in
stews
,
cakes
, and
candies
. Some
recipes
that call for pumpkin allow calabasa to be used in its place. Calabasa is a good source of
Vitamin A
.
Calabasas
is also a city in
California
