Aioli

Aioliaoli (French spelling) or aili (Modern Provenal spelling) from the Provenal aiet ("garlic") and oli ("oil"), pronounced — is a cold sauce made of garlic, egg and olive oil, basically a garlic-flavoured mayonnaise. In Provence, aioli is served with boiled vegetables, boiled fish, and boiled eggs. The Catalan variant allioli (from the Catalan garlic and oil, pronounced) is a thick emulsion of garlic and olive oil only (no egg involved). Different variants of this sauce exists along the Mediterranean coasts from Andalusia to Sicily.
