ShawarmaShawarma, (sometimes spelled as shwarma, schwarma or shoarma) is a Middle Eastern cuisine dish of fine ribbons of spicy lamb meat, similar to Greek gyros, Turkish dner kebab and Mexican taco al pastor. It is flavored with vinegar and spices such as cardamom, cinnamon, and nutmeg. It is accompanied with pita bread and a garlic mayonnaise sauce, tomato onion sauce, or a chili sauce may be included. It is sometimes available made from chicken or beef instead of lamb. Some stores use hot dog buns but most have pita bread, some have both allowing a choice. It can be served with a plate of fries. In Bulgaria, shawarma is a Goulash-like dish. Shawarma is usually made of lamb, chicken or turkey meat, but cannot be made out of beef, (though there is evidence of few beef shawarma alternatives). Also, it is never served with mayonnaise. It is serverd with Tahini or Tahina sauce, made from sesame seeds. It is made from (depending on size) hundreds to thousands of very thin layers, all skewerd onto a big skewer, with lamb fat and tomato on the top of the skewer. It is then roasted from all sides and is cut right before serving.
